Japanese Quick Pickled Cucumbers

A speedy and nutritious side dish, Japanese pickled cucumber offers a burst of flavor in a snap!

Ingredients and Method

Ingredients

  • 2-3 Cucumber
  • 450ml Rice wine vinegar
  • 450ml Water
  • 380g Caster sugar
  • 1/4 tsp Salt
  • 1/2 tsp Black peppercorns

Method

  1. Place all the ingredients apart from the cucumber in a pan and bring to the boil.
  2. Simmer for 2-3 minutes, then allow to cool.
  3. Thinly slice the cucumber, if you have a mandolin that makes it easier, you can also use a peeler and create ribbons instead. Place into jars and pour the vinegar mixture over.
  4. As it is a quick pickle, this can be served right away. Consume within a few days.
