Fig & Balsamic Jam

    Ingredients and Method

    Ingredients

    • 8 cups chopped figs
    • 4 cups sugar
    • 1/2 cup lemon juice
    • 1/2 cup balsamic vinegar
    • 1/2 cup water

    Method

    1. Sterilise jars and put a few saucers in the freezer.⁠
    2. Place all ingredients in a large pan and bring to boil, smashing the figs with a potato masher.⁠
    3. Stirring often, boil until it thickens and test by scooping out a little onto the cold saucers.
    4. Remove from heat, skim off foam if there is any and spoon into Kilner Preserve Jars.
