Ingredients and Method
Ingredients
- 8 cups chopped figs
- 4 cups sugar
- 1/2 cup lemon juice
- 1/2 cup balsamic vinegar
- 1/2 cup water
Method
- Sterilise jars and put a few saucers in the freezer.
- Place all ingredients in a large pan and bring to boil, smashing the figs with a potato masher.
- Stirring often, boil until it thickens and test by scooping out a little onto the cold saucers.
- Remove from heat, skim off foam if there is any and spoon into Kilner Preserve Jars.
