Ingredients
- 400g can of chickpeas (drained and rinsed)
- 4 tbsp mayonaise
- 2 tbsp cream (optional for extra creaminess)
- 1 1/2 tbsp mango chutney
- 1 tsp ground cumin
- 1 tsp curry powder
- 1/2 lemon (juiced)
- 50g raisins
- 50g dried apricots
- 50g chopped celery
- 1/2 small red onion
- 25g parsley
- Handful pine nuts for decoration
Method
- Place the mayonnaise, spices and mango chutney in a large bowl and mix until smooth
- Add the remainder of the ingredients and mix thoroughly.
- Sprinkle with pine nuts.
