Ingredients

  • 400g can of chickpeas (drained and rinsed)
  • 4 tbsp mayonaise
  • 2 tbsp cream (optional for extra creaminess)
  • 1 1/2 tbsp mango chutney
  • 1 tsp ground cumin
  • 1 tsp curry powder
  • 1/2 lemon (juiced)
  • 50g raisins
  • 50g dried apricots
  • 50g chopped celery
  • 1/2 small red onion
  • 25g parsley
  • Handful pine nuts for decoration

Method

  1. Place the mayonnaise, spices and mango chutney in a large bowl and mix until smooth
  2. Add the remainder of the ingredients and mix thoroughly.
  3. Sprinkle with pine nuts.
