
Boston Baked Beans



Experience the classic taste of Boston baked beans alongside a hearty English breakfast or as an accompaniment to your summer barbecue.
This recipe fills 4 x 350g Wide Mouth Preserve Jars.
Ingredients and Method
Ingredients
- 2 cups dried whole fava beans
- 1 large onion
- 2 large garlic cloves (minced)
- 200g bacon (optional)
- 120ml molasses
- 120g brown sugar
- 1 tsp dried english mustard
- 1 tsp salt
- 500ml water or stock
Method
- Soak the beans overnight in plenty of cool water. Once soaked, drain and add to a pan of water. Bring to a boil then reduce to simmer for approximately 35-45 minutes until soft and just starting to split. They should be tender enough to eat but not falling apart.
- Once cooked, drain the beans from the water completely. Add the beans and all the remaining ingredients to a casserole dish with a lid and cook at 150°C for about 4 hours. Check every hour and add water as necessary.
- Add the beans to your jars leaving 1 inch headspace.
- These need canning in a pressure canner and you will need to follow the manufacturer’s instructions.
