Blueberry Almond Granola

The perfect morning treat to kick start your day. Best served with yoghurt and homemade blueberry compote.

Ingredients and Method

Ingredients

  • 2 cups Jumbo oats
  • 2tsp Cinnamon
  • 1/3 cup Almond butter
  • 1/3 cup Coconut oil
  • 1/3 cup Date syrup
  • 1/2 cup Chopped or flaked almonds
  • 1/3 cup Pumpkin seeds
  • 1/3 cup Dried blueberries

Method

  1. Preheat the oven to 140C fan.
  2. In a pan, melt together the almond butter, coconut oil and date syrup together on low heat and stir until well combined.
  3. In a separate bowl mix together the oats, cinnamon, nuts and seeds.
  4. Mix in the melted almond butter mixture until well combined.
  5. Pour the granola mixture onto a lined baking tray then flatten with the back of a spoon.
  6. Bake for 35-40 minutes, or until the granola is golden brown.
  7. Once cool, mix in the dried blueberries and store in a KilnerĀ® jar.
