
Blueberry Almond Granola


The perfect morning treat to kick start your day. Best served with yoghurt and homemade blueberry compote.

Ingredients and Method
Ingredients
- 2 cups Jumbo oats
- 2tsp Cinnamon
- 1/3 cup Almond butter
- 1/3 cup Coconut oil
- 1/3 cup Date syrup
- 1/2 cup Chopped or flaked almonds
- 1/3 cup Pumpkin seeds
- 1/3 cup Dried blueberries
Method
- Preheat the oven to 140C fan.
- In a pan, melt together the almond butter, coconut oil and date syrup together on low heat and stir until well combined.
- In a separate bowl mix together the oats, cinnamon, nuts and seeds.
- Mix in the melted almond butter mixture until well combined.
- Pour the granola mixture onto a lined baking tray then flatten with the back of a spoon.
- Bake for 35-40 minutes, or until the granola is golden brown.
- Once cool, mix in the dried blueberries and store in a KilnerĀ® jar.
