Almond & Vanilla Nut Drink

A fresh and nutrious way to start the day, this vegan nut milk recipe uses almonds, dates and vanilla to create a deliciously sweet and healthy drink. Why not experiment with different flavours, just add fresh fruit or even chocolate before blending.

Ingredients and Method

Ingredients

  • 125g Almonds, soaked in water for 6-8 hours
  • 400ml Water
  • 3-4 Medjool Dates
  • 2 tsp Vanilla Extract
  • 1/2 tsp Sea Salt

Method

  1. Fill the jar up to the 125ml indicator line with almonds then add water up to the 500ml line.
  2. Leave covered for 8 hours to soak.
  3. Once soaked, dispose the water and replace with fresh water up to the 500ml line.
  4. Add dates, vanilla extract and salt.
  5. Place the silicone splash guard on and secure with the screw band.
  6. Insert the hand blender and mix for 2-3 minutes at minimum speed.
  7. Remove the splash guard.
  8. Stir the nixture thoroughly with a spoon.
  9. Let it stand for 15 minutes.
  10. Place the silicone pouring lip, filter press plunger on the jar and secure with the screw band.
  11. Press the plunger down very slowly to separate the almonds from the liquid.
  12. Pour the drink straight from the jar and enjoy!
  13. The nut milk can be stored in the fridge and consumed for up to three days.
