Port-preserved cherries

These cherries are a sweet treat for adults only! Serve alongside chocolate based desserts for a flavour sensation.


  • 300g caster sugar
  • 150ml/5fl oz port
  • 150ml/5fl oz water
  • 1 tsp cinnamon
  • 1 vanilla pod split lengthways
  • 1 orange, zest and juice
  • 350g/12 oz cherries


Sterilise a 725ml/1¼ pt Kilner® jar and lid (see our How To page for details on how to sterilise jars).

Place the sugar, port, cinnamon and vanilla pod in a small saucepan and finely grate the orange zest in. Halve and juice the orange, adding the juice with 150ml/5fl oz water.

Bring the mixture slowly to the boil, stirring every so often until the sugar dissolves. Let it boil until thick and syrupy. Reduce the heat to low and add the cherries and vanilla pod. Heat for a further 3 minutes until the cherries have slightly softened. Set aside to cool slightly.

Pour the mixture into a warm jar and seal the lid. Leave to cool before storing in the fridge.
